The Black Head Porcino is the most prized variety of the Boletus family: it stands out for its dark red-brown color, fleshy consistency and intense flavor. Tradition has it that it is just blanched in acidulated water as soon as it is picked and stored in good olive oil. The Mariangela Prunotto farm follows the ancient recipe and offers us a real specialty, to accompany a plate of great cured meats, such as Culatello di Zibello or Parma or San Daniele raw ham.
