Its aroma is characterized by chrysanthemum and daisies, hummus, peat and cut bark that leave room for pungent and unique hints of macerated flower stem. On the palate, it is mildly sweet and slightly astringent, with a fresh vegetal note.
The milk used to make the tronchón cheese, mentioned by Cervantes in his famous work ‘Don Quixote’, was curdled using thistle flowers.
