The fruit is used at the right degree of ripeness, peeled, cut and cooked with the addition of mustard. A particular sauce that is excellent to accompany meats and cheeses.
It goes well with all cheeses with a strong spicy note, such as Gorgonzola, Roquefort and Stilton, it’s also very appreciable if served with liver pate or terrines.
