Red Adzuki Beans

Adzuki beans are legumes commonly also referred to as red soybeans.

The seeds are small (about 5–6 mm in diameter) with a characteristic white slit at the “eye.”
They are particularly diuretic, extremely rich in insoluble and soluble fiber, including two prebiotic fibers, inulin and pectin.
They contain high levels of minerals such as calcium, phosphorus, iron, and zinc; and vitamins: B1, B2, B3.
Compared to other legumes, they have a very high zinc content (5 mg per 100 g).

They are similar to soybeans and therefore have a slightly sweet flavor, making them suitable for use in the preparation of desserts.
