The artificial word NOOS is derived from the word "Nos", which means "nut" in Ticino dialect. On a mystical night around the summer solstice, the walnuts used for production, still unripe at that time, are picked barefoot by women. So says the legend, and that is exactly how we do it. Cut by hand, the nuts are marinated together with various spices and Swiss sugar in the finest Ticino grappa and exposed to the weather for 40 nights for maceration. Bottling is also done exclusively at night. As in the past, NOOS succeeds in capturing the mystical energy of the night in the bottle
