Ruviotti Beans

Ruviotti beans have a color that is very close to green and a size similar to that of black-eyed beans. Immersed in cold water overnight, they easily regain their shape.

The firm consistency and nutty flavor go perfectly with goose meat, vegetable soups and lamb ragout. They can also be eaten in salads.
