Thistle honey

Its aroma is characterized by chrysanthemum and daisies, hummus, peat and cut bark that leave room for pungent and unique hints of macerated flower stem. On the palate it is medium sweet and slightly astringent, with a fresh vegetal note.
The milk used to produce the tronchon cheese, mentioned by Cervantes in his famous work Don Quixote of La Mancha, was curdled using thistle flowers.
