Yellow Sauce Char and Capers

The Arctic char is one of the noblest freshwater fish. It only grows in particularly clean and cold waters, hence the quality and delicacy of its flesh, paired in our recipe with salted capers and a yellow Apulian tomato with gentle, slightly acidic notes.
