By selecting varieties that are naturally resistant to this climate, the aim is to obtain a highly sustainable product that has the least possible environmental impact. No pesticides are used in the vineyard, but the grass is mowed mechanically, and the distillation is carried out in an artisanal way, using a traditional wood-fired copper still.
